WRITING THIS COMMENT DISTURB ME AND IT SADDENS ME A LOT SINCERELY BUT WHAT DECEPTION!
A VERY AVERAGE DINNER IN ITS GLOBALITY.
THE DISTINCTION OF THE MICHELIN GUIDE WITH A STAR AT THE " DAME DE PIC - PARIS " RESTAURANT MAY BE CONTESTABLE, EVEN IF ALL THE DISHES ARE BEAUTIFULLY PRESENTED, ARE VERY VISUAL AND COLORFUL.
BUT IT HAS STOPPED THERE, EVERYTHING IS IN AESTHETICS DEPENDING ON TASTE, TEXTURE, AND SOME DISHES HAVE A FLAGRANT LACK OF MATTER WHICH LEAVES US ON OUR " FAIM ".
BUT THE LARGEST DECEPTION WILL BE THOSE OF THE WINE SERVICE AND THE SERVICE " EN SALLE ".

WE HAVE TAKEN 4 WINE PAIRINGS + 2 BOTTLES OF WINE, AS WELL AS 4 GLASSES OF WINE IN APERITIFS.
DURING THIS DINNER, I WAS ACCOMPANIED OF MY BEST FRIEND WHO RUN A WINE ESTATE IN BURGUNDY BETWEEN OTHERS.
WITH THE NUMBER OF BOTTLES WE HAVE TASTED, BEING IN A RESTAURANT WITH ONE MICHELIN STAR, A RECOGNIZED FRENCH CHEF, AND GLOBALLY AWARDED, WE ARE ABLE TO WAIT MUCH MORE, AT THE LEVEL OF ADVICE IN SOMMELLERIE.

. THE BERLINGOTS - VERY DISAPPOINTED, THE TASTE OF CHEESE IS TOO PRONOUNCED AND ATOMIZES ALL OTHER FLAVOR OF THE PLATE
. THE DESSERT - THE SENCHA GERANIUM TEA - THE VARIOUS CIRCLES ELEMENTS OF MERINGUES WERE MUCH TOO STICKY, NOT SMOOTH IN TEXTURE OR CRISPY, WHAT RUIN THE ENTIRE SET OF THE TASTING OF THIS DESSERT

| SERVICE " EN SALLE " | THIS IS THE PART OF OUR MOST DISAPPOINTING GASTRONOMIC EXPERIENCE. ALTHOUGH THE SERVICE IS VERY KIND, AND COURTEOUS, THE SERVICE IN ITSELF IS NOT AT ALL WORTHY. GLOBAL SERVICE IS SLOW. THE DISHES ARE SERVED AT TABLE BY DIFFERENT PEOPLE EVERY TIME, WHICH MAKES TOO MUCH MOVES AROUND THE TABLE AND DISRUPTS THE INTIMACY AND CONDUCT OF THE DINNER. THE DISHES ARE OFTEN WRONGLY STATED, OR THE DETAILS OF THE TITLE FORGOTTEN. THE WORST IS THE SOMMELLERIE SERVICE, IT HAS BEEN UNACCEPTABLE THAT ALL OUR GLASSES OF WINES BE SERVED EVERY TIME AFTER OUR DISHES SET ON THE TABLE, AND WAIT FOR LONG MINUTE THE SOMMELIER. ALSO NEED TO LOOK AT THE SOMMELIER AND TRYING TO CATCH HIS ATTENTION TO ORDER OUR BOTTLES OF WINE. THE HANDS OF THE SERVERS WHO WERE TO COMPETE WITH SOMMELIER'S ABOVE OUR TABLE IN THE SERVICE OF DISHES AND WINE, GIVEN A REAL NEGATIVE IMPRESSION (A LOW RANGE SERVICE). I THINK THAT WITH MINIMUM OF INTEREST, OF WILL AND PASSION, NO ONE IS REQUIRED TO MAKE A TOP COOKING AND SERVICE SCHOOL AS IN LYON OR LAUSANNE, TO KNOW THE BASIS OF THE SERVICE AND THE " ART DE LA TABLE ". SERVING THE WINE BEFORE THE PLATES FOR THE CUSTOMER TO HAVE THE TIME TO SMELL IT, AND TO TASTE IT. THUS, IT LETS THE PLACE SERVING THE DISHES IN A FLUID MANNER THAT WILL BE BY THE RIGHT SIDE OF EACH CONVIVE, OR SYMMETRICALLY IF THERE ARE SEVERAL SERVERS IN SAME TIME DURING THE SERVICE. WHAT WILL AVOID ALL NEUTRAL, NON-AESTHETIC CLUMSINESS AND GESTURES ABOVE THE TABLE OF CONVIVES. THE TABLE SERVICE, MUST BE A GAME OF BACK AND FORTH WITH HANDS, LIKE A FLUID CHOREOGRAPHY AND COORDINATED. VISIBLY THE SERVICE AT THIS DINNER WAS MORE THAN BASIC AND AMATEUR. FIRST TIME THAT I MEET A SERVICE ALSO LOW RANGE, AMONG MY NUMEROUS GASTRONOMIC EXPERIENCE. HAPPILY FOR THIS RESTAURANT, THAT I AM A PASSIONATE, A FOODIE LOVER AND THAT I LOVE WHAT CHEF ANNE SOPHIE PIC DOES, BECAUSE IN VIEW OF THE HIGH PRICE OF THE DINNER THIS LEAVES A VERY BITTERY TASTE AND COULD FALL TO HAVE THE IDEA TO GO DOWN TO THE TOWN OF VALENCE TO ENJOY " THE PIC " EXPERIENCE AT THE LEGENDARY FAMILY RESTAURANT. -

THIS IS NOT THE RESTAURANT " COUP DE COEUR ", WHICH IS DONE REGULARLY TO SEE THE EVOLUTION OF THE KITCHEN, THE SERVICE, AND WHERE YOU GET EXCITED TO HAVE A WONDERFUL DINNER.
THIS IS NOT THE RESTAURANT WHERE WE GO BY CLOSING THE EYES, WITH A TOTAL CONFIDENCE AND WHERE WE HAVE A LETTING GO AND WHERE WE CAN BE GUIDED BY THE KITCHEN.
" LA DAME DE PIC - PARIS " IS JUST A FIRST STEP BEFORE THE GREAT RESTAURANT PIC IN VALENCE HOPING THAT THE EXPERIENCE IS MORE MAGIC THAN THAT OF PARIS.
BECAUSE, WITH SO MUCH TALENT, WITH GREAT EXPECTATION REGARDING CHEF ANNE SOPHIE PIC, THE LEVEL OF THIS DINNER IS INCONCEIVABLE, IT IS VERY FAR FROM THE STANDARDS OF NUMEROUS RESTAURANT WITH ONE MICHELIN STAR IN THE WORLD, AND CLEARLY NOT AT THE LEVEL OF THE REPUTATION OF A CHEF AS ANNE SOPHIE PIC.
I THINK THAT IF THE RESTAURANT WAS NOT STAMPED ANNE SOPHIE PIC, THE RESTAURANT HAD NOT HAD THE SAME SUCCESS.
" LA DAME DE PIC - PARIS " LOOKS LIKE A FRANCHISE FOR ACCUMULATED STARS, THE PROBLEM IS THAT COULD DAMAGE THE IMAGE OF ANNE SOPHIE PIC.
